Lintea galbenă și orezul basmati sunt fierte lent până devin cremoase, apoi învăluite într-o „tadka” sfârâitoare de unt clarifiat ghee, chimion, usturoi rumenit și ghimbir proaspăt. Cooking the lentil and rice base
Rinse the lentils and basmati rice thoroughly under cold running water until the water runs clear, then drain them. In a large pot, add the lentils, rice, sea salt, ground turmeric, and approximately 1 liter of hot water.
Bring everything to a boil, then reduce the heat to low and let it simmer covered for 20-25 minutes, stirring occasionally. The lentils and rice should be tender, well combined, and have a creamy consistency similar to a comforting risotto.
Preparing the Tadka (spice infusion)
While the base is simmering, finely chop the yellow onion, crush and slice the garlic, finely grate the fresh ginger, and slice the green chili into thin rounds.
Chef's tip
For an even silkier texture, you can add another 100-150 ml of warm water or vegetable stock towards the end of cooking, depending on your preferred consistency.
Ghee (clarified butter) is the authentic secret of this dish, lending it a distinctive, slightly caramelized note that highlights the sweetness of the lentils and the fragrance of the basmati rice.
