Rinse the chickpeas under cold running water and drain well. Peel and finely chop the yellow onion. Peel the garlic cloves and crush or mince them finely. Peel the fresh ginger and cut it into thin strips. Wash the green chili and slice it into thin rounds.
Cook the basmati rice in lightly salted water for 10-12 minutes until fluffy and tender, then keep it warm.
Cooking the Achari Chana curry
Heat the sunflower oil in a deep frying pan or pot over medium heat. Add the chopped onion and sauté for 6-7 minutes until golden and lightly caramelised.
Chef's tip
The 'Achari' style is famous in North India for its vibrant balance between the heat of the spices and the fresh, tangy note from the lemon.
If you prefer a milder taste, remove the seeds from the green chili before adding it to the pan.
