Preparation method
Boiling the lentils and peanuts
Rinse the lentils well under cold running water. Place the lentils in a pot with 700 ml of water, add the raw peanuts, ground turmeric, and sea salt. Simmer over medium heat for about 20 minutes, until the lentils become very soft and the peanuts tender.
Gently mash the cooked lentils with a wooden spoon or a whisk to achieve a smooth, velvety texture, leaving some lentils and peanuts whole for a crunchy contrast.
Preparing the aromatic tempering (Tadka)
In a deep pan, heat the clarified butter (ghee) over medium heat. Add the ground cumin and ground cinnamon, letting them sizzle for 20-30 seconds to release their aromas.
Chef's tip
The balance between fresh lemon juice and brown cane sugar is the authentic secret of Gujarati cuisine – adjust the amount to taste for the perfect sweet and sour note.
If the sauce becomes too thick as it simmers, add 50-100 ml of warm water to achieve the desired light curry consistency.
