Preparing the beef filling
Finely chop the yellow onion and 2 garlic cloves. Heat a tablespoon of sunflower oil in a large pan over medium heat.
Add the onion and garlic and sauté for 2-3 minutes until translucent. Add the minced beef, breaking it up with a spatula.
Season the meat with half of the fine table salt, ground black pepper, half of the ground cumin, and dried oregano. Cook for 8-10 minutes until the meat is well browned and the juices have evaporated. Remove the pan from the heat and set the filling aside.
Chef's tip
For an impeccable crust, do not soak the buns in the sauce for too long; brushing the sauce on prevents the bread from becoming overly soggy.
Lightly drained and crumbled cow's milk telemea is the perfect local alternative to traditional Mexican Queso Fresco.
