O salată orientală generoasă și sățioasă în stil Pilaki, pregătită din boabe fragede de fasole cannellini înăbușite în ulei de măsline cu morcovi, ceapă dulce, usturoi și pastă de tomate, finisată la servire cu pătrunjel proaspăt, ceapă roșie marinată, lămâie și măsline negre. Un prânz complet, bogat în proteine vegetale.

Preparing the Vegetables and Aromatic Base

Peel the carrots and slice them into thin rounds. Finely chop the yellow onion and crush the garlic cloves. Drain and rinse the Cannellini beans under cold running water.

Cut the red onion into very thin half-moons and place it in a small bowl. Drizzle with the juice of half a lemon and a pinch of salt, leaving it to marinate for 10 minutes to mellow its sharpness and make it crisp.

Pilaki-Style Simmering

In a large saucepan or deep skillet, heat 3 tablespoons of extra virgin olive oil over medium heat. Add the yellow onion and carrot rounds, sautéing for 5-6 minutes until the vegetables start to soften slightly.

Chef's tip

Pilaki is a traditional Mediterranean and Ottoman dish designed specifically to be enjoyed at room temperature or chilled; the flavors of olive oil, lemon, and vegetables become even more aromatic if the salad rests in the fridge for a few hours.

For an extra crunchy contrast, you can sprinkle pine nuts or walnut pieces, lightly toasted in a dry skillet, over the top.
