Prepare the sauce: mix ketchup, grated cucumber (20 g), grated carrot (10 g), a handful of chopped coriander, chili pepper, mint, and rice vinegar in a bowl. Set aside.

Prepare the vegetables for the filling: cut off the ends of the zucchini, cut it in half lengthwise, and remove the seeds. Cut the pulp into 5 cm sticks, then into fine strips. Cut the remaining carrots (200 g) into fine 5 cm strips. Cut the red onion into fine strips and the white cabbage into very fine strips.

Place the chopped vegetables in a large bowl, add soy sauce, oyster sauce, sesame oil, sugar, salt, and pepper. Mix well, then knead the vegetables with your hands. Place the mixture in a colander and let it drain well for 8 minutes. After draining, return the vegetables to the bowl and add the green onion and the remaining chopped coriander.
