Heat the clarified butter (Ghee) in a spacious pan. Peel the shallots, chop them finely, and sauté until golden.

Add the peeled and finely chopped garlic, along with the piece of chili pepper. Sauté for a few more seconds, stirring continuously, being careful not to burn the garlic to avoid bitterness.

Cut the peeled tomatoes into smaller pieces and add them to the pan. Sauté for 2–3 minutes, stirring occasionally.
Chef's tip
For an even more intense flavor, you can add a little smoked paprika or a pinch of cumin. Instead of feta, you can use goat cheese or grated cheddar. Also, a fried egg served on top perfectly complements this dish.
