O rețetă nostalgică din bătrâni, desprinsă din tradiția bucătăriei românești de odinioară: ouă proaspete poșate delicat în lapte dulce clocotit cu unt aromat, până când albușul devine mătăsos și gălbenușul rămâne moale și cremos. Preparing the milk with butter
Pour the whole milk into a wide saucepan and add the butter along with a generous pinch of sea salt. Place the saucepan over medium heat and let the milk come close to a simmer, until the butter melts completely and small bubbles form around the edge of the pot.
Immediately reduce the heat to low, so that the milk simmers very gently without coming to a vigorous boil.
Gently poaching the eggs
Carefully crack each fresh egg into a small cup, making sure the yolk remains intact.
Chef's tip
Use very fresh eggs so that the whites hold together compactly around the yolks in the hot milk.
The milk left in the pan is extremely flavorful and delicious; you can pour it over toasted bread or enjoy it as is.
