Preparing the Fish and Mixture

Remove the fish bones with tweezers. In a bowl, mix the brown sugar with coarse salt, crushed pepper, and grated lemon zest.
Marinating

In a tray, sprinkle one-third of the sugar and salt mixture. Place the salmon fillet on top, skin-side down. Cover the fish with fresh dill and the rest of the mixture, then drizzle with vodka or brandy.

Cover the tray with food wrap and leave the salmon in the refrigerator for 12–16 hours to marinate properly.
