Cut the beetroot into sticks approximately 0.5 cm thick. Place them in a bowl and set aside.

Finely chop the red onion, yellow onion, garlic, ginger, and tomatoes. Keep them separate.

In a small bowl, mix the salt, cardamom, cloves, cinnamon, ground coriander, and curry powder.
Chef's tip
For extra texture, you can add a few roasted cashew nuts on top before serving. It pairs wonderfully with basmati rice or warm naan bread.
