  • 10 red cherry tomatoes
  • 2 chicken eggs
  • 8 fresh basil leaves
  • 1 small garlic clove
  • 1 tablespoon of extra virgin olive oil
  • 1 teaspoon of unsalted butter 82% fat
  • 1 pinch of ground black pepper
  • 1 pinch of iodized table salt

Cut the cherry tomatoes into quarters, place them in a bowl, and gently crush them with a fork to release their juice. Finely chop the garlic and 6 basil leaves.

In a pan, over medium heat, heat the olive oil and butter. Add the garlic and sauté until golden. Add the chopped basil and stir. Add the tomatoes and sauté for 1 minute. Season with a pinch of salt and pepper, then add a tablespoon of water and mix well.

Crack the eggs over the tomato sauce, season them with salt and pepper, then cover the pan with a lid. Cook for about 3 minutes or until the egg whites are set, but the yolk remains soft. Transfer to a plate and decorate with the remaining basil leaves.
