- 100 g classic rolled oats
- 300 ml cow's milk 3.5%
- 380 g Golden apples and golden raisins
- 150 g fresh lemon
- 74 g wildflower honey
- 300 g Greek yogurt 10%
- 30 g walnut kernels and raw almonds
The night before, mix the rolled oats with milk (approximately three times their weight) and leave them in the refrigerator overnight. By morning, the oats will have swollen, become incredibly soft, and absorbed almost all the liquid.
Quarter the apples, remove the cores, and grate them coarsely with their skin on. Immediately sprinkle them with lemon juice and mix to prevent the fruit from oxidizing. Sweeten with honey, the amount depending on the natural sweetness of the apples.
Add the hydrated rolled oats (along with any remaining milk, if any) and yogurt over the grated apples. Mix well and divide into bowls. Coarsely chop the walnuts and almonds and sprinkle them on top, along with the golden raisins. Serve immediately.
Chef's tip
You can replace regular yogurt with Greek yogurt for a richer texture or even with whipped cream. If you want to avoid milk, the oats can also be hydrated in apple or orange juice.
