Mix the egg yolks with mustard and a pinch of salt in a round-bottomed bowl. Place the mixture in the refrigerator for about 20 minutes. Also, chill the oil to ensure a stable emulsion.

Mayonnaise Preparation

Start whisking the chilled egg yolks using a whisk. Pour half of the oil in a very thin stream, stirring continuously and vigorously.

As soon as the mixture begins to thicken, add the vinegar and lemon juice, continuing to mix well.

Chef's tip

It is essential that all ingredients are at the same temperature (cold) to prevent the mayonnaise from separating.

If the mayonnaise separates, start again with a fresh egg yolk and gradually add the separated mixture to the new mixture as it begins to emulsify.

You can customize the taste by replacing sunflower oil with olive oil or by adding aromatic herbs and garlic.
