Preparing the cake layers

Preheat the oven to 170°C (top and bottom heat). Prepare a 24 cm diameter cake pan and line the bottom with baking paper. You can also use two smaller pans (approx. 20 cm).

Separate the egg whites from the yolks. Beat the sugar with the butter and oil, then incorporate the egg yolks one by one.

In another bowl, mix the flour, baking soda, baking powder, and salt.

Chef's tip

For optimal results, leave the can of coconut milk in the refrigerator overnight. This will allow the solid part to separate, which is essential for a dense and smooth cream. You can bake the cake layers a day in advance to facilitate assembly.
