Wash the beetroot and wrap it in aluminum foil. Bake it in the preheated oven at 200 °C until soft (approximately 50 minutes, depending on size). If using a grill, you can bake it directly on the grill in foil.

Place the butter in a bowl and let it soften completely. Add the finely chopped herbs and crushed garlic, then mix well. Shape the mixture into a cylinder in food wrap and refrigerate for 30 minutes to firm up.

Prepare the dip: mix the fermented cream with olive oil, grated lemon zest, sweet paprika, salt, and pepper. Let it rest.

Chef's tip

To make the burger even more appealing to children, you can shape the buns or meat into a bear shape before cooking.
