Preparation method
Preparing the Avocado Mixture
Peel and pit the avocado, then cut it into cubes. Slice the radishes thinly and the celery into small cubes. Roughly chop the mint and finely chop the green onion.
Mix all the prepared ingredients in a bowl. Season with salt and pepper to taste. Place the bowl in the refrigerator until you prepare the rest of the ingredients.
Cooking the Eggs and Bread
Prepare the fried eggs: crack the eggs into a hot pan and cover with a lid for about 5 minutes. Cook until the egg white is completely set. The yolk can remain soft or be cooked longer, as preferred.
Chef's tip
If you want a creamier texture, you can mash half of the avocado with a fork before adding the rest of the diced ingredients.
