Preheat the oven to 150 degrees Celsius (top and bottom heat). Bake the corn tortilla shells for about 25 minutes until crispy.

Meanwhile, prepare the filling and mayonnaise. In a bowl, mix the egg yolks, mustard, a pinch of salt, and 15 ml of lime juice. Using a high-speed mixer, start beating the egg yolks and gradually pour in the sunflower oil in a thin stream. Beat for about 10 minutes until you get a mayonnaise consistency. Let it cool in the refrigerator.

In a pan with 2 tablespoons of olive oil, sauté the sliced chili pepper, add the sliced garlic and let it turn golden. Add the halved cherry tomatoes, half of the coriander, a pinch of salt, and quickly sauté for a few minutes until the tomatoes soften.

Chef's tip

For extra flavor, you can add a little grated lime zest to the mayonnaise.
