Preparing the fish and seasonings
Wash the sardines and pat them dry thoroughly with paper towels. If the sardines are larger, clean out their insides; the abdominal cavity is thin, so a light cut is enough to remove the entrails. Work carefully so as not to tear the delicate flesh.
Break the thyme and rosemary leaves from their stems and chop them finely. Wash the lemon, dry it, and finely grate the zest from half a lemon. Mix the chopped herbs with the lemon zest.
Skewer the sardines and sprinkle them with the herb and lemon zest mixture. Refrigerate them to rest for at least an hour for the flavors to penetrate the flesh.
Chef's tip
If you can't find fresh sardines, you can use small trout or sea bream, prepared in the same way.
