Preparation method
Start by preparing the dough for the Bao Buns. In a large bowl, mix the flour, sugar, dry yeast, and baking powder using a whisk to combine the dry ingredients.
Add the lukewarm water and oil, then knead the dough by hand or with a stand mixer for about 10 minutes, until it becomes smooth and elastic. Cover the bowl and let the dough rise in a warm place for about an hour.
Meanwhile, prepare the oyster mushrooms. Tear them by hand into thin strips, following the natural fibers of the mushroom. Set them aside for later.
Chef's tip
For perfect Bao buns, make sure the water is lukewarm, not hot, so as not to destroy the yeast. You can replace oyster mushrooms with smoked tofu or chicken strips if you prefer a non-vegan option.
