Score the hot dogs lengthwise, being careful not to cut them completely through, so they remain joined. Peel and slice the onion into thin wedges, and the jalapeño pepper into thin slices.

In a pan with a little olive oil and a pinch of salt, sauté the onion over medium heat until golden and caramelized.

Cooking and Assembly

Grill the hot dogs or cook them in a grill pan on both sides until thoroughly cooked. In the last few minutes, lightly warm the hot dog buns on the grill.

Chef's tip

For perfectly caramelized onions, cook them over low to medium heat and be patient until the natural sugars are released and the onions turn golden-brown.

If you prefer a less spicy taste, remove the seeds from the jalapeño pepper before slicing it.
