If using raw shrimp, clean them (leave the tail for easier handling) and remove the intestine. If using pre-cooked shrimp, simply rinse and pat them dry thoroughly with a paper towel.

Peel the garlic and slice it thinly. Slice the chili pepper into thin strips (use less or none if you don't want the dish to be too spicy).

In a large pan or small ceramic dish, heat the olive oil over medium heat. Add the garlic and chili pepper and sauté until the garlic begins to turn golden. Watch carefully not to burn the garlic, as it will become bitter.

For an authentic taste, use high-quality extra virgin olive oil, as it forms the base of the sauce.
Do not overcook the shrimp; they should remain juicy, not rubbery.
