Preparation method
Preparing the marinade
In a non-stick pan, melt the sugar over low heat until lightly caramelized. Pour in the red wine vinegar and mix well. Add the crushed garlic, oregano, cumin, chopped chili pepper, and smoked paprika. Season with salt and pepper. Simmer over low heat until the sauce reduces by half.
Marinating and cooking the ribs
Wash the ribs and coat them well with the prepared marinade, reserving about one-third of it to baste the meat during cooking. Place the ribs in a sealed bag and marinate them in the refrigerator for a few hours, ideally overnight. Cook the ribs on the grill over very low heat (130-150 degrees Celsius) for 2-2.5 hours, depending on the thickness of the meat. Turn them periodically and baste them with the remaining marinade.
Side dish and serving
In the last 10 minutes of cooking, increase the grill temperature to 200 degrees. Add the green onions to the grill, drizzled with a little olive oil, salt, and pepper.
