Start by preparing the dip: in a small bowl, mix the vegan yogurt with crushed garlic, lemon juice, and fresh chopped dill. Season with a pinch of salt and refrigerate until serving.

Prepare the vegetables: slice the red onion thinly, dice the tomato and cucumber, and shred the iceberg lettuce into strips or small pieces.

Cooking the Seitan and Assembly

Heat the olive oil in a large pan. Add the seitan strips (or chosen plant-based alternative) and season them with oregano, smoked paprika, salt, and pepper. Sauté for 5-6 minutes over medium-high heat, stirring occasionally, until golden brown and slightly crispy.

Chef's tip

If you want a creamier dip, you can use a cashew-based vegan yogurt or add a teaspoon of tahini to the mixture.
