Tortillele din grâu integral sunt umplute cu un amestec bogat de fasole roșie, morcovi dulci și roșii zemoase, totul fiind gratinat la cuptor cu brânză cheddar topită și un strat cremos de iaurt. Preparation method
FILLING PREPARATION
In a large pan, heat the olive oil. Add the chopped onion and grated carrot and cook for 5–8 minutes until softened. Sprinkle with chili powder and cook for another 1 minute to release the flavors.
Add the chopped tomatoes and drained beans, then bring the mixture to a boil. Reduce heat and simmer, stirring occasionally, for 5–10 minutes, until the sauce thickens. Season with salt to taste.
ASSEMBLY AND BAKING
Spread a tablespoon of the bean mixture on the bottom of a large baking dish. Fill each tortilla with a few tablespoons of the mixture, fold in the ends, and roll them tightly. Place them in the dish seam-side down. Pour the remaining mixture over the top.
Chef's tip
For extra freshness, you can serve the enchiladas with avocado slices or fresh chopped cilantro.
