
Spaghetti with spinach pesto and chicken

Preparation method
Start by boiling a large pot of salted water for the spaghetti. Meanwhile, clean the chicken breast, then season it with salt and pepper to taste. When the water boils, add the whole wheat spaghetti and cook according to package instructions (approximately 14-15 minutes).
While the pasta is cooking, heat 2 tablespoons of oil in a large pan. Add the chicken breast and fry it over medium heat for 7-9 minutes on each side, until golden and cooked through.
Prepare the pesto: peel the garlic cloves and place them in a tall container for the blender. Add the baby spinach, olive oil, water, cashews, and grated Parmesan. Blend everything with an immersion blender until you get a fine and homogeneous mixture.
Chef's tip
The spaghetti can also be served without chicken, as a quick vegetarian dinner option.
