Ingredients overview
- 400 g of cherry tomatoes
- 6 cloves of garlic
- 3 tablespoons of extra virgin olive oil
- 1 tablespoon of dried oregano
- 1 tablespoon of dried thyme
- 1 teaspoon of cane brown sugar
- 1 organic lemon (zest and juice)
- 200 g of 0% fat Greek yogurt
- 1 pinch of iodized table salt
- 1 pinch of ground black pepper
- 1 handful of fresh basil
- 1 handful of fresh oregano
Preparing and Roasting the Tomatoes
Preheat the oven to 195–200 °C and prepare an oven-safe dish of approximately 20 cm × 25 cm.
Place the cherry tomatoes and unpeeled garlic cloves in the baking dish. In a small bowl, mix 3 tablespoons of olive oil, oregano, thyme, brown sugar, lemon zest and juice, salt, and pepper. Pour the mixture over the tomatoes and garlic, mix well, and roast for 20–22 minutes.
Assembly and Serving
Divide the Greek yogurt into two bowls. Place the roasted tomatoes on top of the yogurt. Remove the roasted garlic from its skin and add 3 cloves to each bowl. Finally, pour the remaining sauce from the baking dish over the tomatoes and yogurt.
Chef's tip
Garnish the dish with fresh basil or oregano leaves for added freshness.
