Start by preparing the ingredients. Cut the bacon into small pieces. Peel and finely chop the red onion. Cut the cherry tomatoes in halves or quarters, depending on their size. Grate the Cheddar cheese and chop the fresh coriander. Cut the jalapeño peppers into small pieces.
Cooking the Omelet and Filling
Heat a pan and fry the bacon until crispy. Meanwhile, beat the eggs, season with salt and pepper. Remove half of the fried bacon from the pan. Pour half of the egg mixture over the remaining bacon in the pan to make an omelet, and finally sprinkle some of the Cheddar cheese on top. Repeat the process for the second omelet. Cut the prepared omelets into long strips.
In a bowl, mix the tomatoes with olive oil, red onion, and coriander. Season with salt and pepper to taste. In another bowl, mix the beans with Mexican salsa sauce.
