Peel the garlic and chop it finely. Squeeze the juice from the lime. In a bowl, mix the chicken strips with 1 tablespoon of olive oil, 2 tablespoons of chili flakes (piri piri), the lime juice, and one-third of the chopped garlic. Let the chicken marinate to absorb the flavors.
Prepare the vegetables: peel the onion and the remaining garlic. Slice the onion into wedges and chop the garlic finely. Cut the zucchini into half-rounds, and the red bell pepper and cherry tomatoes into cubes or halves.
Cooking the Rice and Vegetables
Cook the whole grain rice according to package instructions in lightly salted water.
Chef's tip
For added freshness, you can garnish the plate with a little fresh coriander or parsley.
If you prefer a less spicy taste, reduce the amount of chili flakes.
