Preheat the oven to 180–185 °C and prepare a baking tray (approx. 30 cm × 40 cm) lined with baking paper. Cut the tortillas into squares of approximately 4 cm × 4 cm.

Spread the tortilla pieces on the tray and bake them for 8–9 minutes, until crispy. Halfway through, gently mix them for even baking.

Meanwhile, prepare the dip: peel the avocado, remove the pit, and cut it into cubes. Place it in a bowl, add the finely grated cow's telemea cheese, fermented sour cream, lime juice, salt, and pepper. Mix well until smooth. Roughly chop the coriander and keep it separate.

Chef's tip

For extra freshness, you can also add some quartered cherry tomatoes on top.
