Preparation method

  • 200 g of whole wheat penne pasta
  • 140 g of carrots (peeled and thinly sliced)
  • 100 g of cherry tomatoes (halved)
  • 50 g of pitted green olives (halved)
  • 1 teaspoon of dried dill
  • 100 ml of vegetable broth
  • 100 g of natural yogurt 0% fat
  • 100 g of smoked salmon (cut into pieces)
  • 1 handful of fresh parsley (finely chopped)
  • 1 pinch of iodized table salt
  • 1 pinch of ground black pepper

In a large pot, bring water to a boil with a pinch of salt. Add the whole wheat penne pasta and cook according to package instructions (approximately 14-15 minutes). Once cooked, drain well.

In a spacious pan or pot, sauté the sliced carrots for approximately 3 minutes (you can use a little water or broth to prevent sticking). Add the cherry tomatoes, olives, salt, pepper, dried dill, and vegetable broth. Reduce heat and let simmer for 5-6 minutes.

Turn off the heat. Incorporate the natural yogurt into the vegetable mixture, then add the smoked salmon pieces and cooked pasta. Stir gently to combine the flavors. Sprinkle with freshly chopped parsley and serve immediately.
