Ingredients

  • 40 g Cheddar cheese (coarsely grated)
  • 60 g Gouda cheese (coarsely grated)
  • 1⁄2 small yellow onion (approx. 25 g)
  • 5 g fresh parsley or cilantro
  • 1 medium tomato (approx. 100 g)
  • 2 wheat tortillas (approx. 24 cm diameter)
  • 150 g ground beef (cooked)
  • 60 g corn (thawed)
  • 1 pinch of salt

Instructions

    Prepare the cheese mixture: In a small bowl, mix the two types of coarsely grated cheese (Cheddar and Gouda).

    Peel the onion and finely chop it along with the parsley (or cilantro). Cut the tomato into small cubes. Put everything in another bowl, season with a pinch of salt, and mix well.

    Place a tortilla in a large pan (minimum 24 cm diameter). Spread half of the ground beef and half of the cheese mixture on it. (If you don't have cooked ground beef, you can prepare it quickly: heat a tablespoon of oil in the pan, add 180 g of ground beef, salt and pepper, and fry for 5-8 minutes over medium heat until the meat is thoroughly cooked).

    Turn the heat to medium. While the cheese begins to melt, add half of the corn and half of the previously prepared tomato mixture. Fold the tortilla in half and fry it for 20-30 seconds on each side until golden and the cheese is completely melted. Repeat the procedure for the second tortilla.

    Cut the prepared tortillas into triangles and serve them warm.
