- 500 g beef steak
- 60 ml orange juice
- 2 limes
- 4 fresh garlic cloves
- 1 jalapeño pepper
- 30 ml extra virgin olive oil
- 1 tsp ground cumin
- 1 tsp fine table salt
- 1 tsp ground black pepper
- 8 tortillas
- 1 red onion
- 1 bunch fresh cilantro
Marinating the meat
In a large bowl, mix the juice of 1 lime, orange juice, finely crushed garlic, finely chopped jalapeño pepper (deseeded if you prefer less heat), half of the chopped cilantro, ground cumin, salt, black pepper, and olive oil. Place the beef steak slices into the marinade and leave in the fridge for 15–30 minutes to tenderize and absorb the flavors.
Searing and slicing
Heat a cast-iron skillet or a grill very well over high heat. Remove the meat from the marinade and drain the excess liquid. Sear the beef for 3–4 minutes on each side until a brown, caramelized crust forms on the outside, while remaining juicy and pink in the middle. Transfer the meat to a wooden cutting board and let it rest for 5 minutes, then cut it into small cubes or thin strips against the grain.
Assembly and serving
Warm the tortillas in a dry skillet for 30 seconds on each side until soft and lightly browned. Place a generous portion of warm beef steak onto each tortilla, sprinkle with finely diced red onion and the remaining fresh chopped cilantro. Serve immediately with fresh lime wedges to squeeze over top.
