Wash and dry the pork with paper towels, then cut it into medium 3-4 cm cubes. Clean the leek, wash it well to remove any trace of soil, and cut it into 2 cm rounds. Peel the garlic and crush it lightly.
Blanch the black olives in hot water for 5 minutes to reduce excess salt, then drain them well.
Stovetop cooking
In a deep pan or cast-iron pot, heat the sunflower oil over medium-high heat. Add the pork cubes and brown them on all sides for 8-10 minutes, until they form a golden crust.
Chef's tip
For an even richer flavor, you can use both the white part and the tender green part of the leek.
If you prefer a tangier sauce, add a few drops of fresh lemon juice at the end.
