Pârjoale moldovenești autentice, rumenite frumos la exterior și incredibil de suculente și pufoase la interior, aromate cu usturoi, mărar și cimbru. Un preparat tradițional de casă îndrăgit de toată familia, perfect alături de un piure cremos sau o salată proaspătă de vară.

Preparing the ingredients
In a small bowl, soak the 2 slices of white bread in 100 ml of milk for 5 minutes, then squeeze them well to remove excess liquid. Peel the potato and grate it finely, then squeeze it gently between your hands to eliminate excess water.
Finely chop the yellow onion, crush the 4 garlic cloves, and finely chop the bunches of fresh dill and parsley.
Making the mixture and shaping
In a large bowl, place the minced meat, squeezed bread, grated potato, onion, garlic, and chopped fresh herbs. Add the 2 eggs, 1 teaspoon of dried thyme, 1 teaspoon of salt, and 1 teaspoon of ground black pepper.
Chef's tip
The secret to extremely fluffy Moldavian meatballs is adding finely grated raw potato and thoroughly kneading the mixture to incorporate air.
If you prefer a lighter option, you can bake the patties on a baking sheet lined with baking paper at 190°C for 25-30 minutes, turning them halfway through.
