Bacalhau com Natas este una dintre cele mai iubite mâncăruri de confort din Portugalia: bucăți fragede de cod și cuburi de cartofi aurii învăluite într-un sos mătăsos de smântână și lapte, gratinate la cuptor sub o crustă delicioasă de brânză rumenită.
Preparation method
Preparing the potatoes and fish
Peel the white potatoes and cut them into small cubes of about 1.5 cm. Lightly fry them in a little oil or bake them in the oven until tender and lightly golden at the edges, without being completely crispy, then remove onto paper towels.
In a saucepan, bring the whole milk to a boil together with the bay leaves and a pinch of sea salt. Add the fish fillet pieces and poach over very low heat for 5 minutes. Remove the fish to a plate and flake it into large pieces, removing any bones. Reserve the aromatized milk for the sauce.
Sautéing aromatics and making the creamy sauce
In a large skillet, melt the butter together with the extra virgin olive oil. Add the finely julienned yellow onion and cook over low heat for 8-10 minutes, until it becomes translucent and sweet. Add the finely chopped garlic and sauté for another 1 minute.
Chef's tip
Poaching the cod directly in milk infused with bay leaves is the authentic Portuguese secret: the fish stays extremely juicy, and the milk becomes the flavorful base for the creamy sauce.
For an optimal texture, the potato cubes should only be half-cooked before assembly, so that they absorb all the cream and fish flavors during baking in the oven.
