Preparing the rice and marinated chicken
Rinse the sushi rice in 3-4 changes of cold water until the water runs clear, then cook it according to the package instructions (approx. 15 minutes over low heat, covered). After cooking, leave it covered for 10 minutes to rest, then transfer it to a wide bowl and season with half of the sesame oil (15 ml) and a pinch of salt (half of the total amount of salt). Mix gently and allow to cool to room temperature.
Cut the boneless chicken breast into long, thin strips (about 1 cm thick). Crush the garlic cloves and mix them in a bowl with the soy sauce and the remaining sesame oil (15 ml). Marinate the chicken strips in this mixture for 10 minutes.
Heat a pan with a little sunflower oil (5 ml) and cook the chicken strips over medium-high heat for 5-6 minutes, until evenly browned, cooked through, and nicely caramelised. Transfer them to a plate.
Chef's tip
For clean and neat kimbap slices, wipe the knife blade with a damp paper towel after every 2-3 cuts.
Kimbap is an ideal snack for lunchboxes, picnics, or lunch at the office, as it keeps excellently at room temperature for several hours without needing to be reheated.
