Frijoles Charros reprezintă un preparat legendar de street food din nordul Mexicului: fasole fragedă înăbușită lent într-un sos bogat cu bacon rumenit, roșii zemoase, ceapă, usturoi și ardei jalapeño, servită fierbinte cu coriandru proaspăt, lime și lipii tortilla calde.

Preparing the aromatic base and browning the bacon
Cut the sliced bacon into strips or cubes of about 1 cm. Finely chop the yellow onion, dice the tomatoes into small cubes, mince the garlic cloves, and thinly slice the jalapeño pepper (remove the seeds if you prefer milder heat).
In a spacious saucepan or deep frying pan, heat the sunflower oil over medium heat. Add the diced bacon and fry for 5-6 minutes, stirring occasionally, until nicely browned and crispy.
Add the chopped onion to the browned bacon and sauté for 3 minutes until translucent and golden. Add the minced garlic and jalapeño slices, cooking for another 1 minute until the flavours blend.
Chef's tip
For an even creamier texture, you can gently mash a small portion of the beans with a spatula during simmering.
Frijoles Charros can be enjoyed as is with a spoon, or used as a rich filling directly in warm tortillas.
