Sezamo
Picaditas (sau pellizcadas) sunt un clasic irezistibil al bucătăriei stradale mexicane din Veracruz. Baza crocantă și fragedă din aluat de mălai este coaptă pe tigaie, ciupită pe margini pentru a forma o bordură rustică și unsă cu puțin ulei, apoi umplută cu o pastă aromată de fasole neagră frecată cu usturoi și chimion. Peste fasole se adaugă salsa proaspătă de roșii cu ceapă roșie și coriandru, telemea sfărâmată și un strop de smântână fină. O explozie autentică de arome mexicane, gata în doar 30 de minute!

Preparing the dough and salsa
Finely chop the tomatoes, half of the red onion, and the fresh coriander leaves. Mix them in a bowl with the juice from half a lime and a pinch of salt, making a fresh pico de gallo salsa. Finely chop the remaining red onion separately for garnish.
In a large bowl, combine the corn flour with the white wheat flour and half a teaspoon of salt. Gradually pour in about 220–250 ml of lukewarm water and knead by hand for 3–4 minutes, until you get a compact, soft, and non-sticky dough, similar to playdough. Cover the bowl with a clean towel for 10 minutes.
Flavorful black bean paste
Finely chop the yellow onion and crush the garlic cloves. Heat a tablespoon of sunflower oil in a pan over medium heat and sauté the onion and garlic for 3–4 minutes, until translucent and fragrant.
Chef's tip
Pinch the edges of the dough while it is still very hot, right after removing it from the pan; once cooled, the dough loses its elasticity and will crack when pinched.
You can add diced fresh hot pepper or a few dashes of Mexican hot sauce over the beans if you prefer a spicier touch.
