Ingredients
- 400g pork (thinly sliced pork is usually used)
- 2-3 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 chili pepper or more
- 1/2 onion, cut into pieces
- 1 tablespoon oyster sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1/2 cup water
- Cornstarch dissolved in water (to thicken the sauce)
- Salt to taste
- Pepper to taste
- Chopped green onion for garnish (optional)
Instructions
- 1Cut the pork into thin, uniform slices. You can use any part of the pork you prefer, such as leg or tenderloin.
- 2In a bowl, mix the oyster sauce, soy sauce, rice vinegar, sugar, and water. This will be the oyster sauce.
- 3Heat the oil in a wok or pan over medium heat. Add the pork and cook until golden and cooked through on all sides. Remove the meat from the wok and set aside.
- 4Add more oil to the wok, if necessary, and add the garlic, ginger, and chili pepper. Sauté for 30 seconds until fragrant. Then, add the onion and cook until it softens.
- 5Add the fried pork back into the wok. Pour the prepared oyster sauce over the meat and vegetables and mix well.
- 6Cook until the sauce thickens. Let the mixture simmer for a few minutes, stirring regularly, until the sauce thickens. If the sauce is too thin, add the cornstarch mixture dissolved in water and continue stirring until it thickens.
- 7Taste the dish and adjust the seasoning with salt, pepper, or sugar, according to your preference.
- 8Garnish with chopped green onion, if desired, and serve the hot pork with oyster sauce with plain aromatic rice or with vegetable rice.
