Ingredients
- 200 g fresh broccoli
- 250 g sweet potatoes
- 3 pcs medium eggs
- 100 ml cooking cream 12%
- 1 clove garlic (crushed)
- 1 pinch iodized table salt
- 1 pinch ground black pepper
Instructions
- 1Preheat the oven to 180 °C.
- 2Fill a large pot halfway with water and bring it to a boil.
- 3Peel the sweet potatoes and cut them into slices about 0.5 cm thick. Wash the broccoli and break it into small florets.
- 4Place the vegetables in the boiling water and cook for 2 minutes over medium heat.
- 5Drain the vegetables and place them in a small baking dish (approximately 20 cm x 30 cm).
- 6In a bowl, beat the eggs together with the cooking cream and crushed garlic. Pour this mixture over the vegetables in the dish.
- 7Season with salt and pepper to taste. Place the dish in the oven and bake for 15–20 minutes at 170–180 °C, until the mixture sets and turns lightly golden.
