Dough Preparation
In a large bowl, mix the dry ingredients: flour, instant yeast, powdered sugar, and salt. Gradually pour in the lukewarm water and knead until you get a slightly sticky but elastic dough. Cover the bowl with a clean towel and let it rise in a warm place until it doubles in volume (approximately 45 minutes).
Shaping and Baking
After it has risen, divide the dough into six equal parts. On a floured surface, roll out each part with a rolling pin until you get a flatbread about 3 mm thick. Place the flatbreads on a baking tray lined with baking paper and a little flour. Let them rest on the tray for 15 minutes.
Preheat the oven to 250°C. Place the tray on the lower rack of the oven and reduce the temperature to 220°C (with fan). Bake for approximately 4 minutes, until the flatbreads puff up and start to lightly brown. Flip them and bake for another 2-3 minutes on the other side.
Chef's tip
For an even more interesting texture, you can sprinkle some sesame seeds on top of the flatbreads before putting them in the oven.
