Ice cream and chocolate sandwich

Grate the dark chocolate or cut it into very small pieces using a sharp knife.

On the flat side of a cookie, place a generous spoonful of ice cream, then cover with a second cookie, pressing gently to form a sandwich.

Level the edges where the ice cream comes out with a small spoon and roll the sandwich through the chopped chocolate, so that the edges are well covered. Serve immediately or store in the freezer.
