Marinade and Tempeh Preparation
In a bowl, mix the soy sauce, ketchup, one tablespoon of olive oil, and brown sugar. Add the crushed garlic and mix well. Cut the tempeh into cubes or slices, place it in the marinade, and ensure it is well covered. Let it marinate in the refrigerator for at least an hour.
Preheat the oven to 200°C. Place the marinated tempeh in a tray and bake for 20-25 minutes, until the marinade caramelizes beautifully. While baking, you can baste the tempeh with the remaining marinade for extra flavor.
Cooking the Rice and Side Dish
Cook the black rice according to the package instructions, adding the cinnamon stick, allspice berries, and cloves to the boiling water. After the rice is cooked, remove the whole spices, incorporate the ghee (or clarified butter), and season with salt to taste.
