Roughly chop the cranberries and hydrate them in rum essence (or rum). If you can do this step a few hours in advance, the flavors will be much more intense.
Melt the butter and dark chocolate in a bain-marie (steam bath), stirring occasionally until the mixture becomes homogeneous and shiny. Be careful not to burn the chocolate. Let the mixture cool slightly.
In a separate bowl, beat the eggs with 60 g of granulated sugar until you get a dense and light-colored foam. This process takes approximately 5 minutes with an electric mixer.
Chef's tip
For a spectacular visual effect, don't skimp on the powdered sugar; the thick layer is what creates the beautiful contrast during baking.
You can replace the cranberries with raisins or candied orange pieces for a different variation.
