Preheat the oven to 180°C (top and bottom heat). Prepare a loaf pan, grease it with butter and dust it with cocoa powder.

In a bowl, mix the all-purpose flour, spelt flour, baking powder, salt, cinnamon, cocoa, and lemon zest.

In a deep bowl, cream the butter (250g) with the honey until light and fluffy. Add the eggs one by one, mixing well after each addition.

Chef's tip

For a perfect texture, ensure the carrots are finely grated and well-drained of excess water. You can replace purple carrots with orange or yellow ones for a different, but equally delicious, variation. Decorating with edible flowers or extra nuts adds a touch of elegance.
