Preparation method

Thyme and Lemon Variation

In a dry pan, heated over medium heat, roast 200 g of whole almonds.

Add the fresh thyme leaves, grated lemon zest, and half of the salt.

Drizzle with lemon juice and roast, stirring constantly, until the almonds turn golden and fragrant. Remove them to a plate and let them cool.

Chef's tip

If you don't have chili oil, you can use olive oil to which you add a generous pinch of chili flakes.
