Preparation method
Clean 250 g of mushrooms and cut them into larger pieces. Peel the onion and chop it coarsely. Heat a pan with oil, add the mushrooms and onion, then lightly salt (use part of the salt). Sprinkle with caraway and add the allspice berries, juniper berries, and pepper. Sauté the ingredients together until the onion and mushrooms are nicely caramelized.
Let the mushroom and onion mixture cool completely. Once cooled, place it in a blender, add the smoked tofu, vegetable milk, soy sauce, and salt to taste. Blend until you get a fine and homogeneous paste, then refrigerate it.
Place the flavored butter in a small saucepan along with the chopped garlic, rosemary sprig, and the remaining salt. Fry the rosemary and garlic over low heat for about 2-3 minutes, until the flavors are released into the butter.
Chef's tip
For an even finer texture, you can pass the spread through a sieve after blending.
If you want a completely vegan option, replace the butter with a quality vegetable alternative or deodorized coconut oil.
