Preparation method

Ingredients overview

  • 4 pcs of whole wheat tortilla
  • 200 g of carrots
  • 1 tablespoon of extra virgin olive oil
  • 1 teaspoon of smoked paprika
  • 1 pinch of ground cumin
  • 150 g of classic hummus
  • 2 handfuls of fresh arugula
  • 8 pcs of red radishes
  • 1 pinch of iodized table salt
  • 1 pinch of ground black pepper

Cut the carrots into larger sticks, mix them with olive oil, smoked paprika, cumin, and salt. Bake them in a preheated oven at 200 °C for about 20 minutes, until tender and lightly browned.

Spread the hummus on the whole wheat tortillas, then add arugula, roasted carrots, and thinly sliced radishes. Season with a little ground black pepper.

Roll the tortillas tightly and wrap them in baking paper to maintain their shape. Serve immediately or pack them for a nutritious lunch.

Chef's tip

For extra crunch, you can add some toasted sesame seeds or pine nuts over the hummus.
