- 2 mackerel fillets (approx. 200 g)
- 2 tablespoons of wholegrain mustard
- 2 tablespoons of extra virgin olive oil
- 1 red chili pepper
- 2 sprigs of fresh lemon thyme
- 8 fresh sage leaves
- 1 handful of fresh green parsley
- 2 tablespoons of lime juice
- freshly ground black pepper to taste
- iodized table salt to taste
- 400 g of boiling potatoes
In a small bowl, mix the olive oil with the wholegrain mustard and lime juice. Finely chop the aromatic herbs (thyme, sage, parsley) and the chili pepper, then add them to the bowl. Season with salt and pepper to taste. Brush the mackerel fillets (previously washed and dried) with this mixture, massaging the flesh gently.
Heat a pan over medium heat and place the fish in it, skin side down first. Cook for 2 minutes, then turn the fillets over and cook for another 2 minutes on the other side (the time may vary depending on the thickness of the fillet). Serve immediately alongside boiled or crushed potatoes.
