Preparing the pea puree

Peel the shallot and chop it finely.

Place the butter in a pan and wait until it starts to foam. Add the shallot and sauté until golden.

Add the peas, season well with salt and pepper. Pour in the vegetable broth and let it reduce by half. Finally, add the milk and cream, stir, bring to a boil, and simmer for 7-8 minutes.
